CARPACCIO tip with arugula pesto
Ingredients:
- 400 g beef tenderloin (609 kcal, 83 g B, 30 g T, 1 g S)
- 80 g of Parmesan cheese (311 kcal, 28 g B, 21 g T, 3 g S)
- Pesto (1 140 kcal, 19 g B, 112 g T, 4 g S)
- 1 bundle of arugula (24 kcal)
- 20 g pine nuts (122 kcal, 5 g B, 10 g T, 3 g S)
- 100 ml olive oil (825 kcal, 91 g T)
- 40 g parmesan per pesto (156 kcal, 14 g B, 11 g T, 1 g S) 2 garlic cloves (13 kcal)
- salt, pepper, lemon
Cut a portion of the tip and a piece from the centre of the sirloin into thin slices. Take the baking paper and rub it with oil, put the meat on it, spread it out and cover it with the second piece of paper. Not with a meat mallet, but only with a hand, preferably a palm, knock the meat. Then transfer to a plate, season with salt, pepper, pesto, garnish with arugula and sprinkle with Parmesan shavings.
For pesto:
In a blender mix arugula, pine nuts, garlic and olive oil in the necessary amount to ensure the pesto has the right consistency. Season with finely grated parmesan and salt.
